I usually make lo mei at home when I need a quick dinner. The trick is in the noodle itself. I don't really like to use spaghetti/pasta because it takes away the flavor from the chinese egg noodles. Try to get the fresh egg noodles and they are usually cheap in the chinese grocery stores. The second trick is to remember to use minced garlic, ginger and scallions and of course, soy sauce, sesame oil and a little bit of sugar. I sometimes add some rice wine to stirfry to add extra flavor but not neccessary. In terms of other ingredients, I usually throw in whatever vegetable that's left in the fridge (for example, celery, carrots, onions, etc).
You'll be surprise on how simple lo mein and fried rice are to make. Hmmmm..you are making me hungry now =P.
