FH and I are looking for a Deacon to marry us - we thought it would put an interesting spin on things (verses a priest) as deacons are able to be married themselves.
Any recommendations? The few we've tried are already busy on the day of our wedding.

St. Patricks Church in Bay Shore has a few deacons. Not sure if they do ceremonies outside of St. Pats, but if they don't they might know of some.

Have you already spoken to the deacons at your church? I'm assuming you have, but perhaps they can lead you in the right direction by providing some names of other deacons. My uncle is a deacon and he's marrying us, so I know they can go outside the church they associate with.
