Re: Low Carb or No carb Snack Foods

Cheese, Pepperoni, Olives, Macadamia nuts.. strawberries with homemade whipped cream (sweetened with splenda, it's not as hard to make as it seems)

Sometimes I'll have a small cucumber salad if I'm really hungry during snack time. Mr Bills Cheesecakes in Lindenhurst makes a sugar free cheesecake that is awesome.

There is also Dannon carb control yogurt if you like yogurt... and sugar free jello if the asperteme doesnt make you stall...

I have a bag of sugar free reese peanut butter cups that I've been devouring slowly (1 per day).. about 19grams of sugar alcohols in 5 of them, but I found if I eat in moderation, then I'm okay.

Just be careful of the prepackaged foods. Some manufacturers subtract the sugar alcohols from the carb counts because they supposedly do not elevate your blood sugar, but recent tests have shown the opposite. So, if you're not going to stay away from sugar alchols totally, do yourself a favor and calculate the net carb count yourself, and count half the sugar alcohols (just in case!)

There are lots of good recipies at http://www.lowcarbeating.com/

Thanks so much. What is your recipe for Whipped cream made with Splenda? Last time I was on low carb, I lived off Whipped Cream.

Re: Low Carb or No carb Snack Foods

I just take a container of heavy cream (i think its a pint?) and whip it along with 2 teaspoons of splenda and a teaspoon of vanilla.

If you freeze the metal bowl and whipper thingies it will make creme a lot quicker.

I've also heard that you can whip in sugar free jello mix, to give it a little flavor on its own....

Just be careful not to over-whip it or it will turn into butter! It just takes a few minutes or until soft peaks form when you pull the beaters out.

I'm trying to go low-carb myself and it's the hardest thing I've ever had to do!!!!
