Hey Beth- I love Peonies, that's what I used for my wedding, all Peonies. You should definitely use them, they are such big beautiful flowers. I had low centerpieces like that also

I believe Peonies are only in season from late April to June, your florist should be able to let you know for sure though. Peonies and Hydrangea would look so beautiful together.
