Re: Madelines

Yes, here it is.

Unsweetend Cocoa (3 tablespoons +1 1/2 teaspoons)
Boiling Water (3 tablespoons)
3 large eggs
Vanilla Extract (1 1/2 teaspoons)
Sifted Cake Flour (not self-rising) 1 1/4 cups
Baking Powder (3/4 teaspoon)
Salt (1/4 teaspoon)
Unsalted Butter (13 tablespoons)
Sugar (3/4 cup)

Whisk the cocoa and water until blended. After the water cools, add eggs and vanilla extract.

Combine dry ingredients in a separate bowl and mix. Add half of the chocolate mixture and beat for 1 minute. Slowly add the remaining choc. mix.

Carefully spoon the batter into a madeleine mold pan, do not fill the molds, only fill about halfway. Bake for 10-12 minutes, until the madelines are springy.

You may need to refrigerate the batter while baking--it can get goopey and hard to work with otherwise. When finished, you can leave the madeleines alone, or dust with granulated sugar or confection sugar.
