depends...I am getting calla lillies for myself & my girls will be carrying all roses...Then my mom & FMIL will have tulips...I think you are pretty much open to what you can have

No. You might pay a little more for certain flowers, but your florist can get anything if they import it.

You should be fine. I didn't think I was going to be able to get peonies, but my florist will have them for me.
