Re: MEATLOAF, HELP!!
I make my meatloaf the way my mom does...
I take ground beef and veal...mix it together with a chopped onion, salt, peper, egg, parm. cheese, garlic powder, parsely and bread crumbs...I mix this all together.
Then I roll out this mixture (flat) I then put a layer of mortatella (sp?) and a layer of sliced eggs (cooked) then I roll it up and make it into a loaf.
You can also use proscuitto(sp?) and mozzarella.
I put it in a baking dish with chopped up celery, potatoes, tomatoes, salt and peper. Then I bake it. As it is baking I marinade the meat with it's own juices.
It may sound weird...but it's REALLY good and doesn't feel like your eating a giant meat ball!

Re: MEATLOAF, HELP!!
I have been making this one for years and years...I don't do the mixed chopped meats. I do not like veal at all, and never ever serve it in my home. preheat oven to 350 degrees 1 - 1.5 lb pkg of chopped meat 2 tsp saltg fresh pepper (a good turn of it) a full tablespoon each of garlic powder and minced onion flakes 1/2 cup of bread crumbs 1 egg 1/2 cup of milk
mix it all together until well blended. put mixture into a loaf pan. optional: top with a few tablespoons of ketchup and/or 4 slices of uncooked bacon. I do both sometimes, none other times. bake for 1.5 hours
serve hot with gravy.

Re: MEATLOAF, HELP!!
I make mine almost the same as Michelle, but instead of breadcrumbs I use crushed Ritz crackers(I omit the salt because they have a lot on them already). I also throw in some bbq sauce to give it a little extra flavor, but not too much because then it'll be mushy.

Re: MEATLOAF, HELP!!
Depends on the size of the pieces but it should feed 3 people, maybe 4. You can make 2 of them if you want to be safe. But do not try to double the recipe and put it in the same loaf pan- not a good idea. just make 2.

Re: MEATLOAF, HELP!!
I have a recipe I make that adds oatmeal instead of breadcrumbs. It comes out awsome every time. My husband is always asking for it!

Re: MEATLOAF, HELP!!
My husband is not a huge meatloaf fan (and I am!), but these two from Kraft he really liked:
Marvelous Meatloaf:
Ingredients: 2 lb. ground beef 1 cup dry bread crumbs 3/4 cup A.1. Original Steak Sauce, divided 2 eggs 1/2 cup finely chopped green pepper 1/2 cup finely chopped onion
Preparation MIX meat, bread crumbs, 1/2 cup steak sauce, eggs, green pepper and onion in large bowl.
SHAPE into 9x5-inch loaf. Place in greased 13x9-inch baking pan.
BAKE at 350°F for 1 hour. Brush with remaining steak sauce; bake an additional 15 minutes. Let stand 10 minutes before slicing.
Italian Meat Loaf
Ingredients 1 cup dry bread crumbs 1/4 cup milk 2 lb. ground beef 1 can (8 oz.) tomato sauce or catsup, divided 3/4 cup finely chopped celery 1 envelope GOOD SEASONS Italian Salad Dressing Mix 1 egg, slightly beaten 2 Tbsp. chopped parsley (optional)
Preparation MIX bread crumbs and milk in large bowl. Add meat, 1/2 of the tomato sauce and remaining ingredients; mix until well blended.
SHAPE meat mixture into oval loaf in shallow baking pan.
BAKE at 350°F for 1 hour. Spoon remaining tomato sauce over meat loaf. Bake 20 minutes or until meat loaf is cooked through.

Re: MEATLOAF, HELP!!
I honestly never made it 'from scratch' before, because one day I saw a meatloaf mix (the same area as tacos, gravy, etc mixes) I tried it and it was GREAT!!! All the seasonings are in one envelop.
I just add the meat and diced onions. My FH mom used to always make it, mine really never did..HE LOVED MINE!
