We are trying to figure out if we should do a chicken, beef, fish and seafood or 2 chicken,beef and seafood I know we are definately having the beef dish and the seafood one, I want that Just cant decide on the other 2 and my thing is the chicken we can always have one of them at the CH.

depends what types of chicken they offer, and what type of fish.
I do think its good if you give everyone a variety of choices so maybe do the fish. Like you said, they can get chicken at CH plus there is a chicken dish already on the menu.

Lots of people like ordering the salmon so i think it would be a good choice. The chicken princess, it seems like something you can just do at CH or something similar thatyou can get at CH. Or vice versa like you said with the chicken.
If you do either one of the chickens at CH, would your FH be more open to doing salmon for the dinner?

Yes if that how we decide then that is what we will do. He doesnt eat fish or seafood and he calls himself an Italian, So he would eat the beef or chicken. I just feel there is more choices that way.
