Mexican Fiesta Recipes?

Hi Ladies, I am planning a Mexican Fiesta for Saturday and need easy ideas for appetizers and dinner. I was thinking tacos for dinner, or something self-serve like that. We're expecting approx 18-20 people. Any ideas???

For a great dip - 7 Layer dip. It is a hit at any party I have brought it to and it is so simple to make.

- Layer of Refried beans.
- Layer of sour cream (mixed with taco seasoning mix)
- Layer of mashed avacado (mashed with a little bit of lemon juice)
- Layer of shredded cheeses (can buy a package of taco shredded cheese for simplicity)
- Layer of diced scallions
- Layer of diced tomatoes
- Layer of chopped black olives

The scallions, tomatoes, olives are just tossed on top - not an overwhelming layer.

Serve with scoop chips.

I would also made fresh salsa and guacamole. I think there have been a few recent posts on that.
