have you met with your music director/organist and singer yet?
I met with mine yesterday and they gave us live demos of songs to choose from -- it was so exciting!!!!!!!!!!!!!!
that really is the best way to choose it b/c they will tell you what the options are.

I would meet with your organist or can you get a hand on a hymn book? the responsoral psalm can be ANY psalm from the book of psalms. it can be read with a verbal response (could way to get another person invovled as a reader.) OR you can a hold of a hymn book and choose a psalm of your own... this is what i am doing. although i cantor, so i've sung most of the psalms so i know what I like!!! :)
for after the unity candle, if you're havign a mass, i would pick a short song as you're going right into communion. i am doing a choral piece... again, i know, doesn't help you as i'm having a choir. but, if you're having just a ceremony, you might want to pick something longer, because after the unity candle, your wedding is basically over. some good ones that i like are: 'the lord bless you and keep you' (this is what i'm using, there are many settings by many composers) 'ave maria' (most popular are the two by bach and scubert) 'the irish wedding song' (you don't have to be irish, the lyrics are perfect) 'there is love' 'one hand, one heart' from west side story
