I'm a bit confused. Did you have a whole chicken in soup? If so, I believe it's supposed to fall apart. That's how the meat falls off the bones.

The chicken is supposed to fall apart! That is why it is so yummy - becaise the broth has the chicken flavor now!

Isn't it better that way? Then you don't have to worry about picking chicken off the bones!

If you're making soup, usually you use the carcass don't you (ie: the bones after the meat is eaten)Some meat is left on there, the stuff you can't easily cut off. I mean you can leave the chicken meat on there too but yes it will fall apart. Hot steamy water is penetrating it, so it will. Don't worry, pick out whatever bones you can find with a skimmer.
