FH and I would like our guests to stay at hotel that would provide shuttle service and has a bar that will stay open until at least 1 or 2am....any recomendations?

I'm not sure what services they provide, but the closest to the watermill would be The Wyndam Windwatch and the marriot (both off the expressway in islandia) or the Sheraton in Hauppauge.

We are using the Islandia Marriott because they gave us the best group rate and because they have a bar. The Holiday Inn Express was the only hotel that offered a free shuttle but they dont have a bar.

I'm surprized they didn't tell you this when you booked.
Yes, the Holiday Inn Express has the shuttle if your guests book at least 10 rooms.
