need dessert recipe - low carb, low fat; low sugar?

My mom is on a low fat, low carb diet. But tomorrow is her birthday celebration and I want to make a cake....any dessert recommendations? Recipes? Please! Thank you!

what about angel food cake?? then put strawberries on it.....so yummy and nice and light

My mom is diabetic and I always make her a moose trifle. You take 1 package of sugar free pudding, half the suggested amount of milk, and one container of cool whip. I usual get chocolate and vanilla and layer it.

its yummy and most people dont even realize it is diet.

I do a lot of diet soda mixes.

You mix the cake mix with a can of diet soda.

The yellow or lemon cake with diet sprite is sooooooo moist. I usually top it with coolwhip and strawberries or another fruit.

You can also make a pudding pie, they sell red. fat crusts and obv sugar free fat free pudding. (not sure if someone said that already)
