Need Easter Desert

Need Easter Desert

Going to the in-laws for easter dinner. I am no much of a baker (I'd much rather cook dinner than desert) Does anyone have a good desert recipe?

I always make a cute bunny cake for the little cousins. You bake a cake mix in two round pans. Use one pan for the head, and cut the other into two ears -- the middle becomes a bow tie. Assemble on a tray. I've decorated it all different kinds of ways -- colored cocunt, candy, I even used all pastel m&ms one year.

Hope this helped.

I'm making couer a la creme. I saw it on Barefoot Contessa the other day and it looked soooo good (and easy!).

Coeur a la Creme with Raspberry and Grand Marnier Sauce

Recipe Summary
Difficulty: Medium
Prep Time: 20 minutes
Inactive Prep Time: 8 hours
Cook Time: 4 minutes
Yield: 6 to 8 servings
User Rating: No Rating

12 ounces cream cheese, at room temperature
1 1/4 cup confectioners' sugar
2 1/2 cups cold heavy cream
2 teaspoons pure vanilla extract
1/4 teaspoon grated lemon zest
Seeds scraped from 1 vanilla bean
Raspberry and Grand Marnier Sauce, recipe follows
2 half-pints fresh raspberries
Place the cream cheese and confectioners' sugar in the bowl of an electric mixer fitted with the paddle attachment and beat on high speed for 2 minutes. Scrape down the beater and bowl with a rubber spatula and change the beater for the whisk attachment. With the mixer on low speed, add the heavy cream, vanilla, lemon zest, and vanilla bean seeds and beat on high speed until the mixture is very thick, like whipped cream.
Line a 7-inch sieve with cheesecloth or paper towels so the ends drape over the sides and suspend it over a bowl, making sure that there is space between the bottom of the sieve and the bottom of the bowl for the liquid to drain. Pour the cream mixture into the cheesecloth, fold the ends over the top, and refrigerate overnight.
To serve, discard the liquid, unmold the cream onto a plate, and drizzle Raspberry and Grand Marnier Sauce around the base. Serve with raspberries and extra sauce.
Raspberry and Grand Marnier Sauce:
1 half-pint fresh raspberries
1/2 cup sugar
1 cup seedless raspberry jam
2 tablespoons orange-flavored liqueur (recommended: Grand Marnier)
Place raspberries, sugar, and 1/4 cup water in a small saucepan. Bring to a boil, lower the heat, and simmer for 4 minutes. Pour the cooked raspberries, the jam, and orange liqueur into the bowl of a food processor fitted with the steel blade and process until smooth. Chill.
Yield: 2 cups

My MIL does this every year for Easter and lets me decorate him with all the candy! Yummy!

Re: Need Easter Desert

I always make this when I need a really easy dessert. I claim to make it for the kids but everyone loves it and it doesn't need baking.

Make 2 pgs. chocolate instant pudding and cool til thick.
In a rectangular pyrex baking dish, put down a layer of graham crackers.
Spread chocolate pudding over the crackers.
Spread cool whip over that.
Repeat with a layer of crackers and another layer of pudding.

It can be make up to this point a day or two in advance. Put Cool whip on top just before serving - either a layer or dollops. Then you can even decorate with sprinkles or Easter candies.

This can also be made very low cal with sugar free pudding, skim milk, reduced calorie graham crackers and fat free Cool Whip.

It's really good.

You could also add vanilla pudding to this for a nice twist. Graham crackers at bottom, layer of chocolate pudding, layer of graham crackers, layer of vanilla pudding...top with cool whip...............YUMMY!

I also thought of a slightly more sophisticated version. Use the graham crackers with vanilla pudding, and then spread blueberry pie filling for the third layer. At that point, any pie filling would work. Cherries sounds yummy too.

Is 10:30 AM too early for dessert? I want some now.
