Sounds soooo good!!!!! I just left work and someone ordered eggplant meatballs from the corner resturant...smelled soooo yummy!!

I saw this on her show yesterday. I would try making it wth low fat cheese and maybe 90% lean meat or 99% FF turkey meat. I would prob. put both the tomato and cheese in each of them too.

we are making it with the 99% ff turkey meat as well as fat free cheese.

so funny we were just having a similar convo at lunch today..beef vs turkey and if you can taste the difference. I want to try to make stuffed peppers with turkey.

we are using less than the recommended amount of pesto, using the 99% FF turkey meat, ff cheese and that makes it a healthy meal!

i've done this and it's still delicious!! i use lots of fresh garlic, onions, and parsely when i make the filling.
