Here's one I have used (it's from Betty Crocker ) and they are delicious!

Gingerbread Cookies

1/2 c shortening
1/2 c sugar
1 t baking powder
1 t ground ginger
1/2 t baking soda
1/2 t ground cinnamon
1/2 t ground cloves
1/2 c molasses
1 egg
2 1/2 c all-purpose flour
decorative candies (optional)

IN a mixing bowl beat shortening with an electric mixer on med to high speed 30 seconds. Add sugar, baking powder, ginger, baking soda, cinnamon, and cloves. Beat till combined, scraping bowl. Beat in as much of the flour as you can with the mixer. Stir in remaining flour. Divide dough in half. Cover and chill for 3 hours or until easy to handle.

Grease a cookie sheet and set aside. On a lightly floured surface, roll half of the dough at a time to 1/4 inch thick. Use gingerbread people cookie cutters to cut dough into desired shapes. Use spatula to lift up cookies and place 1 inch apart on prepared cookie sheet. Decorate with candies.

Bake in a 375 degree oven for 6-8 minutes until edges are slightly browned. Makes about 18 cookies.
