NWR - best recipe EVER!
ok so those of you who like loaded cheese fries will love this!
1 lb. chicken breasts
2 lbs potatoes (better to use white/red/yukon gold than russets or baking potatoes)
2 cups shredded jack cheddar cheese
2 scallions, chopped
bacon bits
1/2 to 3/4 bottle of ranch dressing
packet of ranch seasoning (the dry mix)
olive oil
salt and pepper to taste
cut the potatoes into bite-sized pieces (about 1 inch), toss with a little olive oil and packet of ranch dressing mix. roast at 400 degrees for about 20-30 minutes until fork-tender but not completely brown.
cut the chicken into one inch pieces and saute them over medium heat with a little oil, salt and pepper until no longer pink, about 10 minutes total.
combine chicken in a large bowl with potatoes, ranch dressing, about 1 cup of the shredded cheese, the scallions, and as many bacon bits as you want. serve with extra cheese and bacon on top. it makes about 4-6 servings.
OMG i made this last night and it was sooooo yummy!
it's not an exact recipe, more like an 'idea' - hence the lack of exact amounts or exact cooking times. i usually cook by sight and feel, so sorry if this is annoying to some!
