Oh I love the idea of chili for the opening week of football! I may steal your idea! Here's my chili recipe, I call it Chili, Hold the Beans.

2lbs. chop meat browned and drained
1/2 onion chopped
1 green pepper diced
1 can diced tomatoes with liquid
2 14oz cans tomato sauce
1tbs. cayenne pepper
1/2 cup water

Mix all ingredients together and let simmer 11/2-2 hours.

Serve with cheese, sour cream and chips.

I make this one all the time and it's really good (I add some jalepeno peppers to it to give it a little kick)

So weird...I just finished making chili! The good thing about chili is that there really is no wrong way. I chop any vegetables I have - today it was red and green peppers, celery, carrots, onions and garlic and saute with olive oil. I always use ground turkey since it's healthier. Let that brown with all the veggies then add a can of tomatoes with green chilis in them and any kind of beans I have - today was kidney beans. I season it with a lot of chili powder and cumin and whatever else I feel like that day. Then I add half a bottle of beer and let it reduce a little. Last I add cooked whole wheat pasta and cheese. So good!!!!

Having leftovers of this for dinner tonight! DH loves it. Here is the basic recipe I follow but I add a can of crushed tomatoes of course it changes a little depending on what I have in the house.

My favorite tip for those that like chicken chili - get one of the roasted chickens from the supermarket (or make your own if you're ambitious), let it cool a while, then just pull of all the meat. It has so much flavor and is so tender. Yumm!

Thanks! It really is so good and pretty healthy and easy. It's kind of a take off on a WW chili recipe I used to make. I especially like it because just guess where the other half of the beer goes.

Re: NWR: Chili Recipe

I JUST made homemade chili for my giant taco dip I made for tailgating Saturday!! I make like 4 different kinds of chili, this one was all meat extra thick! I'll give you the recipe for the taco dip, I make it for Superbowl every year and everyone LOVES it!!

2 lbs ground beef (you can use ground turkey or chicken if you're trying to be healthy)
1 small diced onion
3 cloves minced garlic
1 green pepper finely diced
1 big can tomato sauce

1 package 2 alarm chili mix, any supermarket has it. Comes in a red box. It's the perfect mix of all the spices in individual packets. I have a spice rack, but this thing is cheap and everything is perfectly measured out.

Take a big sauce pan and heat it. Put in some EVOO (ugh I just threw up a little. I hate Ray Ray hehe sorry RR lovers!!) and then add the garlic. Wait a minute or two then add the onion. Cook a few minutes then add the peppers. Once the veggies have softened add the meat and brown. Drain the fat. Add the tomato sauce. Mix well. Now start adding the spices from the chili pack. Then add a can of water. Continue following the chili instructions.

I let the chili simmer for an hour.

Taco Dip:
Giant bag finely shredded cheddar cheese
Quart of Sour cream
Cream Cheese
Fresh chopped cilantro
Tortilla chips

Now in a deep dish pyrex (like for lasagna) or an aluminum baking tray, start layering the follwing:

One good bottom layer of chili meat.
Cover it fully with cheddar cheese thickly and evenly.
Add spoonfuls of cream cheese intermittently throughout pan, then cover that with more shredded cheddar.
Another layer of chili meat.
Carefully add a layer of sour cream with a soft spatula.
Another layer of cheddar cheese
Another layer of chili meat
Another layer of cheddar cheese.

Keep it going, finish the top with cheddar cheese. There's only one layer of sour cream in the middle.
Then double seal it with two layers of aluminum foil and bake in a 400 degree oven for like 35-40 minutes. Garnish with fresh cilantro and serve with lots of sour cream and chips!! They will love it!!!
