Re: nwr: meatloaf and potatoes
I use:
1 pound chopped meat 1 egg 2 handfuls breadcrumbs 1/3 cup ketchup A few shakes of Worcestershire sauce
Mix it all together and form into a loaf. Then I also drizzle some more ketchup over the top.
Then I chop up potatoes and onions and arrange them in the same baking pan around the perimeter of the meatloaf. Cook at 350 for around 30 minutes and then cover and cook for another 20 min.

I do the same thing, but I always put fresh chopped onions, garlic, and usually parsley in it too.... Sometimes I skip the ketchup & w-sauce and just make a glaze - dijon mustard, ketchup, w-sauce, dark brown sugar, honey - it's sweet & yummy and I put it on after it's baked a little and is sooo yummy!

I do the same as above as well, but add a couple slices of bacon on the top. It cooks with the meatloaf and gives it a lil extra flavor.

I use the meatloaf recipe on the Lipton's french onion recipe secrets box. DH and I typically do not like meatloaf, but we LOVE this recipe - and it's so easy!

Meatloaf
1/2 cup brown sugar 1/2 cup of ketchup 1 1/2 lbs of ground beef 3/4 cup milk 2 eggs 1 1/2 tablespoon salt 1/4 teaspoon pepper 1 small onion (optional) 1/4 teaspoon ground ginger (I leave out) 3/4 cup saltine crackers crushed into little pieces (I put them in a ziplock baggie and crush them up good until I get 3/4 of a cup worth. Ususally bang it against the counter)
Preheat Oven to 350 use 5X9 inch pan Press brown sugar to line bottom of pan spread ketchup over brown sugar mix all other incrediants in a bowl, shape into a loaf and place on top of ketchup bake for 1 hour or until fully cooked
I HATE meatloaf and if I do say so myself...this is AMAZING
Parmesan smashed potatoes
Ingredients nocoupons 3 pounds red potatoes, unpeeled 1 tablespoon kosher salt plus 2 teaspoons 1 1/2 cups half-and-half 1/4 pound (1 stick) unsalted butter 1/2 cup sour cream 1/2 cup freshly grated Parmesan 1/2 teaspoon freshly ground black pepper Directions Place the potatoes and 1 tablespoon of salt in a 4-quart saucepan with cold water to cover. Bring to a boil, lower the heat, and simmer covered for 25 to 35 minutes, until the potatoes are completely tender. Drain.
In a small saucepan, heat the half-and-half and butter. Transfer the potatoes to an electric mixer fitted with the paddle attachment and mix them for a few seconds on low speed to break them up. Slowly add the hot cream and butter to the potatoes, mixing on the lowest speed (the last quarter of cream and butter should be folded in by hand). Fold in the sour cream, Parmesan, the remaining salt, and pepper; season, to taste, and serve immediately. If the potatoes are too thick, add more hot cream and butter.
Keep the smashed potatoes hot in a heat-proof bowl set over simmering water.
