NWR: Mexican recipes?

Does anyone have any good Mexican recipies? Cinco de mayo is coming up and I'm doing a lesson on it. I want to bring in snacks for my kids. Something snack-like or a desert would be preferable!

TIA

You can make Quesadias and cut them up for the kids. Or the Tostitos 'Scoop' chips could be filled with salsa.

Cheesy Chili Dip

1 can chili (no beans)
1 package cream cheese
1 package shredded mexican cheese

Spread cream cheese onto a baking dish (not a pan, but like a casserole dish).

Pour and spread chili over cream cheese.

Sprinkle shredded cheese over chili. Bake in oven at 350 for around 30 minutes or in microwave 10-15 minutes.

You can also make this more WW friendly with fat free or light cream cheese and reduced fat shredded cheese. Serve with tortilla chips, bread, or veggies

That Mexi-chilli dip I make all the time would be good to bring....Do you remember how to make it? If not, looks like Laura put up the ingrediants and how to put it together...Its sooooo easy and obviously yummy!!
If you dont want that there is another layered dip you could make, sour cream, diced tomatoes, refried beans, shredded cheese, guacamole, and sometimes you could put black beans into it also depending on your mood (just layer it all together)

that dip is probably best for kids - sometimes children are picky eaters. good luck!
