Wild rice with peas & mushrooms.

Cook the rice normal
Saute fresh baby portabella in a small amount of butter.
When the rice & the mushrooms are done, mix in a seperate bowl add peas & toss.
Be sure to drain the water out of the peas prior to adding to the mix.
You can make this the night before, nuke it the day of it keeps fine.
If you want to add a little fancy..............add some fresh chopped parsley.

Here are a few Ideas:
1)brown rice after it is cooked stir in diced tomatoes and chopped scallions
2) Zuchini grilled wiht a little salt and pepper and EVOO
3) TRader Joes has amazing frozen vegtable mixes...our favorites are fire-roasted veggies and harvest hodgepodge (yes that is its real name)
