Re: NWR: Please share

I just made chicken fried rice last night.

I used boil-in-a-bag brown rice and cooked that.

While that was cooking, I scrambled 2 eggs and 2 egg whites in a skillet. Removed from pan. Then sauteed up some chicken and onions. Once those were cooked through, I put the eggs back in and added a can of peas and carrots, then the cooked brown rice, then some soy sauce. YUM.

grilled chicken w/ balsamic, feta, sundried tomatoes (or whatever you like)

i usually make a bunch of grilled chicken at once. then as needed, slice up a cutlet, drizzle with balsamic (sometimes i throw rosemary on there too), put in toaster oven. cut up sundried tomatoes (i buy a container of them without the oil). when chicken is crisped to your liking, let it cool for a couple minutes, add SDT and feta and you're good to go! i use fat free or reduced fat feta.

Sooooo GOOD!!! I double the recipe (and it is 5 points for 2 cups. so filling!)

Veggie Chx Soup

2 servings, 2 cups each
Ingredients
• 1 tablespoon extra-virgin olive oil
• 8 ounces chicken tenders, cut into bite-size chunks
• 1 small zucchini, finely diced
• 1 large shallot, finely chopped
• 1/2 teaspoon Italian seasoning blend
• 1/8 teaspoon salt
• 2 plum tomatoes, chopped
• 1 14-ounce can reduced-sodium chicken broth
• 1/4 cup dry white wine
• 2 tablespoons orzo, or other tiny pasta, such as farfelline
• 1 1/2 cups packed baby spinach
Preparation
1. Heat oil in a large saucepan over medium-high heat. Add chicken and cook, stirring occasionally, until browned, 3 to 4 minutes. Transfer to a plate.
2. Add zucchini, shallot, Italian seasoning and salt and cook, stirring often, until the vegetables are slightly softened, 2 to 3 minutes. Add tomatoes, broth, wine and orzo (or other tiny pasta); increase heat to high and bring to a boil, stirring occasionally. Reduce heat to a simmer and cook until the pasta is tender, about 8 minutes, or according to package directions. Stir in spinach, the cooked chicken and any accumulated juices from the chicken; cook, stirring, until the chicken is heated through, about 2 minutes.

Stir fry

Baked chicken--Panko breadcrumbs and bake in the oven instead of frying

I saute chicken and onions and garlic..Then I add diced tomatoes, and other veggies I love..you can add any you prefer. I usually do brocolli, stringbeans, peppers, carrots. Add tomato sauce if you want and it's delish! You can serve over whole wheat pasta or just eat the chicken and veggies in the sauce.
