NWR - Thanksgiving side dish suggestion?

FH and I are having our 2nd annual Thanksgiving Remix at our house this yr - which is basically Thanksgiving all over again on Fri with all our good friends. I have my menu and shopping list all put together, but i need one more side dish....

Last yr I made really yummy crab stuffed mushrooms, but it was way too time consuming and tedious for everything else that i was trying to get done at the same time. I'm looking for something that I can basically throw together and bake - specifically a casserole or souffle with broccoli/califlower or zucchini.... something along those lines......

any yummy suggestions???

Its a little bit different than what you explained but what about homemade 5 cheese macaroni and cheese. Its very delicious, ive made it before but also a bit heavy. Not something to eat often but thanksgiving is a perfect occasion.

lol it is so good but also so heavy. Once in a while its worth it hahaha.

It is Patti Labelle's recipe, here it is

Ingredients:Serves 4 to 6

1 tablespoon vegetable oil
1 pound elbow macaroni
8 tablespoons (1 stick) plus 1 tablespoon butter
1/2 cup (2 ounces) shredded Muenster cheese
1/2 cup (2 ounces) shredded mild Cheddar cheese
1/2 cup (2 ounces) shredded sharp Cheddar cheese
1/2 cup (2 ounces) shredded Monterey Jack
2 cups half-and-half
1 cup (8 ounces) Velveeta , cut into small cubes
2 large eggs , lightly beaten
1/4 teaspoon seasoned salt
1/8 teaspoon freshly ground black pepper
Preheat the oven to 350 degrees F. Lightly butter a deep 2 1/2-quart casserole.

Bring the large pot of salted water to a boil over high heat. Add the oil, then the elbow macaroni, and cook until the macaroni is just tender, about 7 minutes. Do not overcook. Drain well. Return to the cooking pot.

In a small saucepan, melt eight tablespoons of the butter. Stir into the macaroni. In a large bowl, mix the Muenster, mild and sharp Cheddar, and Monterey Jack cheeses. To the macaroni, add the half-and-half, 1 1/2 cups of the shredded cheese, the cubed Velveeta, and the eggs. Season with salt and pepper. Transfer to the buttered casserole. Sprinkle with the remaining 1/2 cup of shredded cheese and dot with the remaining one tablespoon of butter.

Bake until it's bubbling around the edges, about 35-45 minutes. Serve hot.

and here is video of patti labelle making it

I have a great recipe that's pretty simple for corn pudding. It's amazing and so simple to make!

1 (15.25 ounce) can whole kernel corn, drained
1 (15 ounce) can cream style corn
1/2 cup margarine, softened
1 cup sour cream
1 (8.5 ounce) package dry cornbread mix

DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 2 quart casserole dish.

2. In a medium bowl, mix together the whole kernel corn, cream style corn, margarine, sour cream, and corn bread mix. Pour into the prepared casserole dish.

3. Bake for 45 minutes in the preheated oven, or until a knife inserted in the center comes out clean.
