She likes coffee, but made a really stupid comment a while back, that 'she doesn't think that gift certificates are a good present... that they're a cop out for people who dont like to take the time to buy a gift'. She's an a$$ like that... (hence only spending $25)

Does she like dessert? You could send her something from Harry and David or another similar company. They run sales online and you can find discount codes on a coupon website.

A bottle of wine, a nice candle, how about one of those oil dipping sets (check out peir one, Peter Andrews, Crate & Barrell, Williams-Sonoma). You can definetely find something appropriate under $25 at any of those places.
