NWR~Zucchini

Ok, so i started my first garden ever and i actually have veggies growing!! It's a miracle!!!! Does anyone know of any quick easy recipes for zucchini besides olive oil and garlic?

my absolute fave is marinating the zucchini in lite italian dressing for like an hour, and then putting it on the grill!!! you slice the zucchini in thin slices and cut the ends off... omg its TO DIE FOR!

actually, the last time i made it, i didnt even marinate it that long. maybe 2-3 minutes cuz i forgot to...it still tasted AWESOME!

I grill it... make a marinade of olive oil, lemon (lots of lemon), salt, pepper and fresh italian parsley. Its really good.

Also how about fried zucchini but oven baked so its not so fatty with the oil.

Or you can hollow it out and put some kind of stuffing and cheese on top of it and bake it.

Bread it and saute in a pan in a bit of olive oil, put some parmesan in your breadcrumbs . . . . Serve with a red sauce or white . . . .

You can also put it in a lasagne . .. .

It's versatile . . . . as a side dish, slice it and steam it with squash, and it's a great seafood side (especially salmon)

You can grill it too, and that's delish
