We wanted Chilean Sea Bass for the menu because everyone thought it was delicious at the tasting.
When I mentioned that I was intersted in getting it - the hall first told me it may be 'game-y' in Oct.
I picked it anyway - so... now they have a new story - they told me that they are having trouble getting it (I don't know how it relates to the sea bass population in Oct...)
I would imagine neither excuse is true - and its a money factor... bass more expensive in the fall. Is anyone else's hall having sea bass issues? Or am I getting played? Sometimes I just wish they would level with me... 'its too expensive - we will have to add it to the bill' Why can't they just tell the truth? Perhaps they should have put a note in the menu, or told me when I handed over my $$$$.

Re: October / Fall menu question
Nope we are getting Seared Sea Scallops with mushroom ravioli and summer truffle sauce as our seafood choice.
Ok I just called him and he said he will check the 2005 regulations to give you an exact on when the season ends for sea bass. But he said for it to taste fresh it needs to be caught close to when it is served and not frozen and thawed. Sea Bass will taste game-y after it has been frozen.
What are your other choices?

hmmm - interesting.
and dude - save me some mushroom ravs... I love that.
didn't your hall tell you that summer sauce will be game-y in the fall. You should go with the autumn sauce. That should be easier to come by too!

I wouldn't be...I've had Chilean sea bass in the fall and it's delicious!
My hall said they can get it but it is very hard because it is becoming extinct!!!
that is the truth - it is has come in by mostly illegal fisherman who over fished it - they are cracking down on illegal fisherman and the the leagl ships are having trouble getting enough to catch to make it worth while
the fish's real name it is a tooth fish and it lives of the waters of antartica - so hard waters to fish -

My hall told me the same thing... that they're having a hard time getting good sea bass and that they wouldn't know until the week of the wedding if they could get it. Since I'm making my menus and couldn't wait until the last minute, I opted for the mahi mahi.
