Officiant and Ceremony

Anyone have an officiant recommendation?

We are non-traditional and looking for someone up to date and fun.

Does anyone know of alternatives to the typical lighting of the unity candle?

I know about the 'sand' ceremony...but that is very summery for our February wedding.

I also know about the 'rose' ceremony... and am still debating that.

Does anyone know of any additional ceremony ideas??
