We are having a Roman Catholic Monsignore marry us at Chateau La Mer with a Rabbi... so its not impossible....

Yea - also, the priest i talked to said he couldn't unless it was an interfaith marriage...

I'd love to know how you did this... we couldnt not find a Rabbi that would even participate in our ceremony because I'm not jewish

You can have a Roman Catholic priest who has retired from the priesthood. Once you are a priest, you are a priest for life...no matter if you leave it or not. However, this marriage will not be seen as valid in the eyes of the Roman Catholic Church.
If you are both Catholic, you cannot have a marriage outside of the Church be recognized by Rome. I believe this does not apply though if one of you isn't Catholic.
