You'll have to excuse me, I am not a very experienced cook but I've had good meatloaf and I want to make a good one for DH... but I don't know the first thing! How do you make it so it's not dry? And what do you put in it?

Re: Okay... how the heck do you make Meatloaf?
For me I use chop meat, egg (1 egg per lb of meat about), bread crumbs, parsley, and shredded onion (or a half package of onion soup mix from Liptons). It is never dry. Bake and with about 5-10 minutes left, I top with a can of tomato sauce to finish cooking. I do not like ketchup or cheese in/on my meatloaf.

here is the link to the recipe I made awhile back that palebride & boosh used and their DH loved it too!!
I also made this one and my entire family raves about it. My FH still likes his mothers better but everone else that I have made it for loves it.

For me I use chop meat, egg (1 egg per lb of meat about), bread crumbs, parsley, and shredded onion (or a package of onion soup mix from Liptons). I also add Emeril's seasoning, worshishire sauce, garlic salt, black pepper, ketchup and/or beef gravy.
Top it with a little gravy- never ketchup.
I also make stuffed meatloaf for my DH. I bought small loaf pans. Put a layer of chop meat mix, then a hot sausage (break it up out of the casing- cooks more evenly), sauteed peppers & cheddar cheese. I make mine with sauteed mushrooms. Then top w/ more meat, and gravy and bake.
Be careful w/ the black pepper. Too much makes it taste dry even if its not.
ETA: I like fresh onion better b/c 1- its cheaper and 2-less salt and other unknowns. I also sometimes add a dash or 3 of hot sauce/tabasco to the meat mixture.

I use 'Bag and Season' it is great ,my mom used this and my DH loves it when I make it. You can find it with the mixes in the sauce aisle at Stop and Shop.

Re: Okay... how the heck do you make Meatloaf?
Here's my ingredients: (I form mini-meatloaves)
Combine: Ground Sirloin (approx. 1 pound) Red Wine (generous amount) Red Wine Vinegrette Wish Bone Dressing (a few squirts) Soy Sauce (a few shakes) Finely Chopped Onion Finely Chopped Mushrooms 3 handfuls of Stove Top Stuffing Fresh Ground Pepper
Over the top: Ketchup (generous amount) Mrs. Dash Garlic & Herb
I do not use egg in my meatloaves and don't think I'm missing on anything by not having the eggs in there.
Set loaf/loaves in a glass dish and bake at 325 for about 45 minutes to 1 hour.

Mom made it with gravy so I make it with gravy. His mom made it with ketchup and he didn't like his moms.
I think it is how you grew up too. I would never use ketchup either. I have tried someone who made it that way and put it on top with cheese and to me it was a big hamburger. My DH the other day made me swear I didn't put it in. As the 'true Italian' he says he doesn't eat ketchup - he won't even put on his french fries. It grosses him out.....So I think it is personal taste and how you are use to it.
mix it all together, shape it into a loaf in a pan or on top of a foil-lined cookie sheet, put either BBQ sauce or ketchup on top, and bake at 350 for 1 hour...
It is amazing how many different recipes there are for meatloaf!! I guess you just have to keep trying them until you find your favorite!

Re: Okay... how the heck do you make Meatloaf?
ground beef one egg bread crumbs or crumble up a slice of white bread and mix in the beef. season the beef with Adobe. sometimes I chop up an onion
mix it all together shape into a loaf, sometimes I sprinkle a light layer of bread crumbs on the top and put it in the oven until it is done.
I don't make mine with ketchup on the top because I like to eat my meatloaf with Cold ketchup on the side.

Re: Okay... how the heck do you make Meatloaf?
I add so much into mine.
1.5 lb chop meat 1 onion can slice mushrooms 1.5 can corn 1 green pepper adobe parsley garlic ketchup 1 egg bread crumbs(on top) it makes a nice crust
mix it all up then I top with bread crumbs, I found that if I go bread crumb happy comes out dry
that is funny with ketchup, DH was totally opposed to it, I had to sneak it in, now he adds it too.
