We're going to HAwaii to and also staying 11 nights. I'm not sure about excersions. That's FH's job.

Definitely go kayaking in Kauai and then Parasailing and snorkling and/or scuba diving in Maui!

Go on a snorkel cruise! There are a lot of people (it's literally a small cruise boat) with you and the ppl that run the boats are really helpful!
