On a happy note:

Any bakers on here?

What can I add to a recipe to ensure that the cake I want to make comes out moist and fluffy? (The combination listed seems like it would make for a rather dry cake.)

LOL I once made cookies that seemed too dry and doubled the amount of butter. That worked. 2 sticks, so it wasn't too healthy, but it was tasty!

Re: On a happy note:

Maybe more oil and use a higher speed on the mixer to 'fluff it'

Hmm, does the recipe call for any extracts, like vanilla or almond? If it does, you could add a drop or two than the recipe calls for.

What kind of cake is it?

Re: On a happy note:

Let me explain.
1) I wanted to make a pineapple, coconut cake.
2) I like to bake from scratch.
3) It's almost IMPOSSIBLE to find a recipe that don't have the words: 'CAKE MIX' in it. HELLO!!!!!!!!!!!!!!
4) So I found one. But now I'm worried it won't be good enough. I can't imagine that boxed cake (even frilled up a bit) would be better than fresh.

What is this world coming to?

Oh WORD!!!! I only bake from scratch and I was once looking for a recipe for Death By Chocolate, but every recipe I came across started with 'take 1 package of cake mix and 1 package of pudding mix...' Ick.

I think with a pineapple coconut cake you shouldn't have to worry too much about how moist it will be. Coconut is pretty sticky stuff so that should help.

Have you checked the Martha Stewart Living website? They have a great recipe section.

I love to bake and totally agree with you on baking from scratch. How's this recipe?

Pineapple-Coconut Upside Down Cake

2 tbsp. light corn syrup
6 tbsp. butter, softened and divided - No Substitutes
1/2 cup firmly packed light brown sugar
2 tbsp. flaked coconut
1 can (8 ounces) sliced pineapple in syrup, drained
1 1/3 cups all purpose flour
2 tsp. baking powder
1/4 tsp. salt
3/4 cup granulated sugar
1 egg
2/3 cup whole milk
10 tbsp. whipped topping

Heat corn syrup and 1 tbsp. of the butter until melted in a small skillet over medium heat.

Stir in the brown sugar. Cook over medium heat until mixture is bubbly. Pour mixture into an ungreased 9-in. round cake pan. Sprinkle coconut evenly over the top. Arrange whole pineapple slices on top of coconut.

Preheat oven to 350ºF.

Combine flour, baking powder, and salt in a medium bowl. Set this aside.

Beat remaining 5 tbsp. butter in a large bowl until fluffy. Beat in granulated sugar, egg, and vanilla.

Add flour mixture to butter mixture alternately with the milk, beginning and ending with the flour mixture. Pour batter into cake pan which has the prepared topping.

Bake about 40 minutes or until cake springs back when lightly touched in the center. Cool in pan on wire rack for 2 to 3 minutes. Loosen side of cake pan with a knife. Invert onto a serving plate.

Serve warm or cool, topping with whipped topping.

Yield: 10 servings

Found another:

PINEAPPLE & COCONUT CAKE

1/2 c. shortening
3 eggs
1 1/4 c. sugar
1 tsp. vanilla
2 1/2 c. cake flour
2 1/2 tsp. baking powder
1/4 tsp. salt
1 c. milk

Cream shortening, add sugar, slowly, beating well. Add unbeaten eggs, one at a time, beating well after each egg is added. Add vanilla. Sift together dry ingredients and add alternately with milk to first mixture. Bake in 3 layers in moderate oven at 375 degrees for about 35 minutes.

FILLING:

1 can crushed pineapple (sm.)
1 can Baker's coconut
3 unbeaten egg whites
2 c. sugar
9 tbsp. cold water
1 tsp. vanilla
1/2 tsp. baking powder

Place sugar, water and egg whites in top of double boiler. Place over boiling water and beat with egg beaten 7 minutes or until thick. Remove from fire, add flavoring. Beat until thick, add baking powder. Continue to beat until thick enough to spread without running between cake. Add coconut and pineapple on top and sides of cake and sprinkle with coconut.
