Do you think I should do my font color in black or gold (gold costs an extra $100, but my colors are champagne/gold, deep red, ivory, and white)

I personally don't like the self mailers... but that is probably the nicest self mailer I have seen! I think the black lettering looks fine and is probably easier to read than gold.

what does it mean by self mailer? that that is the envelope? i think it's a great invite and i think the black lettering would be perfect

Basically, the self mailer is no envelope. The first picture is how it looks when it is received in the mail. when you open it, the center has the invitation mounted to it and the bottom flap has a pouch for the inserts.
