Tell me what you think. Should we add anything...change anything??

CH
a lot of passed food: scallops wrapped in bacon, pigs in a blanket, spring rolls, baked clams, and a million other things...this all comes with it

Antipasto station, pasta station with 3 pastas, fruits and veggies (again all of this comes)

Now we had to pick two carving stations:
Suckling pig
Prime rib

8 hot dishes:
Chicken Marsala
Sweet and sour Hawaiian chicken
Eggplant rollatini
Beef and broccoli teriyaki
Sausage and peppers
Seafood paella
Fried calamari
Kielbasa with sauerkraut

**we wanted mussels marinara, but our bm said it might be too much seafood. think we could take something out for that though? we loveeee mussels

first course:
fresh mozz., tomato, red peppers, eggplant with vinaigrette

second course:
choice of cesar or garden salad

intermezzo
sorbet drizzled with champagne

dinner:
Chilean sea bass oregenata
chateau Briand (filet mignon)
chicken cordon bleu
stuffed shrimp (stuffed with crabmeat)

cake, choc fountain, ice cream bar with all the fixings, and zepolis

Everything sounds so good. If you really want the mussels i would take out the seafood paella and substitute for mussels.

Now I am hungry!

Sounds amazing, I'm drooling. How about you take the kielbasa with sauerkraut out and do mussels instead? Unless it is a cultural thing and you want to keep the kielbasa? I've never seen it at a wedding before. And people LOVEEE seafood! I dont think it would be too much!

If you want mussels I would take out the fried calamari. Don't get me wrong i LOVE me some fried squid but I have never been to an event where fried calamari actually tastes like it came out of the kitchen-it's been my experience that fried food can't sit out more than a few minutes without losing some texture.

I agree about the calamari. It's the kind of item that needs to be FRESh. Sitting will usually make it a little soggy and chewy. Mussels will work much better.

Your menu sounds delish!
