Passover meal ideas?

Passover meal ideas?

Anyone? I'm going to go grocery shopping again today... but I'm going crazy. I forget how much I rely on wraps, pasta, etc.

I've been doing a laid back kosher for passover (no bread, pasta, breaded things, flour but i have been eating rice, rice-based things, etc because I have Crohn's and I'd probably starve otherwise) and I'm going crazy already.

Already made matzoh ball soup, potato latkes, matzoh pizza... 'rice balls' (chop meat, sauce and rice in a bowl) and had steak w/ mashed potatoes last night for dinner.... but i miss 'real' food so much

anything you actually enjoy eating on passover?

Chocolate?

Maybe salads? I made an AWESOME vegetarian chopped liver salad on Saturday (if I do say so myself). But you can do egg salad, tuna, hummus, stuff like that, and you don't need bread with it - have it on a plate with some lettuce and tomato.

Also, I could eat Matzoh Brei every day for a week, and would have that for dinner. That's just eggs and matzoh though, and you might be sick of that by now. But I've seen recipes where people do it up with onions, cheese, stuff like that - you could try to make it more interesting.

I assume you're talking about dinners? I made an awesome kfp mondel bread. Even my non jewish friends liked it! If you want the recipe for that let me know. As far as dinners go, I've been eating turkey and the leftover brisket I made.

Do you have a chipotle down there?

For lunch I had fish, mashed potatoes and mixed veggies. Try to incorporate some salmon into the mix, which is always good with rice, salad, veggies, etc. I also love sweet potatoes as a side.

I also had an omlet the other night with turkey burger pieces in it (not as bad as it sounds!)

I made chicken cutlets last night with matzah meal, love it. Also you can cook up some ground beef and toss it in with your ingredients for matzah brie. There's always any meat with potatoes. I'm getting hungry now...ugh

Mmmmmm....Matzo Brei! With sugar on top...yum!

I'm so bad...I sort of forgot it was still Passover.
