Penne ala Vodka

Penne + Emeril's Vodka sauce!


We tried another bottle sauce .. and it was excellent .. just can't remember which it was .. I'd need to see the bottle.

Sorry .. I know this probably doesn't help!

I LOVE this recipe!!!

1/3 c heavy cream
1/2 c 2% milk
1 can crushed tomatoes
3 shallots
3 cloves garlic
pinch red pepper
1 TBspn butter
small amt olive oil
1/4 c parm cheese
1/4 c vodka

-heat oil & butter in skillet
-add garlic & shallot
-add vodka - heat until reduced by 1/2 (about 2 min)
-add crushed tomatoes, salt, red pepper
-simmer uncovered 10 min
-while sauce is simmering - in large pot, boil water for pasta...cook as directed until al dante.
-add cream to sauce 9cook about 2 min)
-add pasta....cook until fully covered.

ENJOY

A shallot kinda looks like a small red onion .. in the shape of an individual clove of garlic.

I've used them .. and they're very similar to onions.

I just made this and it was soooo yummy!!!!! Thanks!
Wondering though, why is it when I make anything pasta (so it seems), eating it the next day it is already so dry?

Try adding just a little bit of water to it....works wonders
