I think we always knew we'd get married in the winter. FH is in construction and work is slow so we can relax and take a longer honeymoon.

I'd say maybe pricing would sway him? But the pricing really only applies to the reception hall and some of them are still expensive in January. The only things we've been able to get for being 'off-off season' is viennese hour price cut in half and free add-ons from the hall. Any other vendors don't really sway just because of our wedding month.
