one per couple, kids get their own.
if a single brings a date that is a sister or friend or something I MAY do separate.
but actual dates are on the same card.

ETA this is for escort cards, which we usually call place cards.
If you are doingthe actual place cards that you put at the place setting, I'd do one per person.
