Do you make placecards for each individual person of for each couple? If you do it individually what do you do for the guests when you don't know their names????

I would do it by couple. It's easier. For those bringing dates, you could say 'and guest'.

We did it by couple and for couple's who we didn't know, it was the 'person's name we knew and guest'.
