Re: planning disney honeymoon
I've heard really wonderful things about The Animal Kingdom Lodge, and of course the Polynesian and the Grand Floridian are excellent. If you're looking for something a little more modestly priced, I have always liked the Caribbean Beach and Port Orleans (French Quarter). We stayed at Port Orleans Riverside, and it was very nice, but I think that French Quarter is a bit more polished.
Edited to add: It's really important that while you're in the parks the two of you wear the bride and groom ears. They really do make it worth your while. We got free desserts most places, and cast members go out of their way to make special memories for you.

Re: planning disney honeymoon
I've never stayed at either of those places, but a friend of mine who goes all the time said she really loved the Poly. Wilderness Lodge is supposed to be fantastic.
Here are some links she gave me for planning our Disneymoon! Disboards
Anytime I've been to Disney, I always enjoyed my trip more if I was staying at a hotel on the monorail. It definitely makes traveling around easier. The Polynesian, Contemporary, and Grand Floridian (my favorite!) are all on the monorail.

The Caribbean Beach Resort it is one of there moderate resorts, so it is a little less expensive, but sooo nice, I love it there, we are probably going there for our honeymoon too, actually got engaged there.

I second the Polynesian Concierge Lounge. We had an amazing experience at this place.
I highly recommend eating at Victoria and Alberts. It was expensive but an amazing experience.

I stayed at the Animal Kingdom Lodge last year and LOVED it! We had a savannah view of all the animals.

Re: planning disney honeymoon
OMG!! I hear about NOTHING but Disney all day...my mom is a freak for Disney..you think she worked for them! Anyway, I LOVE the Boardwalk...we are staying there for the first 3 nights of the HM. We stayed there last year and we thought it was great because tehre is stuff to do at night and it is central to MGM and EPCOT...you can actually walk to dinner at EPCOT even after the park closes.
FM me if you have questions about any other Disnery resorts.

Re: planning disney honeymoon
My favorite hotels at Disney World are the Animal Kingdom Lodge and the Polynesian. Some restaurants you have to try: California Grill at the Contemporary, if you go there at the right time, you'll be able to catch the fireworks over the castle. Jiko at the Animal Kingdom Lodge and Ohana at the Polynesian Resort are great too.

Re: planning disney honeymoon
I went in January twice. It was pretty chilly one year, we had to wear long pants and sweatshirts. The other year however, the weather was gorgeous... sunny 70's all week long! The swimming pools are heated... I think you should be able to swim. Check the weather report before you leave so you will know what to pack.
The crowds are generally on the low side during January but the hours are usually shorter. You should have no problem doing everything though. Just remember to use the Fastpasses, they are these little tickets that you pick up at the popular rides... basically you get a designated time to come back and skip the line.

Re: planning disney honeymoon
FH is in Disney right now for a business trip! It's his fave place on earth, and we've stayed at the Contemporary each time we've been there. If you stay there, make sure you get on the concierge floor (free breakfast and afternoon snacks, can't believe how much we loved it) and get a room facing the lake. It's much better than facing the parking lot/Magic Kingdom!!!!! Also, nothing beats being in one of the three hotels with the monorail!
