Prime Rib Side Dishes

Making prime rib for XMAS day dinner at my house. There will be 8 of us. Any ideas for sides would be welcome

How about twice baked potatoes?
Garlic or horseradish mashed potatoes? Creamed spinach??

Mash Potatoes
Roasted Red Potatoes with Stringbeans
Asaragus with bread crumbs and Parmegan
Carrots with Brown Sugar and Maple Syrup
Fried Eggplant
You can do lots of things!

I made a big Prime Rib on the bone -yummy a few months back. It was for about 8 people too!

I made Creamed Spinach (homemade), Baked Potatoes with backed Parmesean cheese, fresh broccoli, bread, I think something else but can't remember - maybe stuffed mushrooms. Oh - and Penne alla Vodka for a 1st course!
