I would thank the divorced parents by addressing them separately---for instance, since my parents are still married, I might say: 'I would like to thank my parents, Maude and Roger Hyphenbride.'
If they were divorced, I would phrase it, 'I would like to thank my parents, Maude Hyphenbride and Roger Hyphenbride' (or different last names if mom remarried or took back her last name).
In terms of an aunt and uncle who are like your parents, just write a sentence or so about how they've been there for you whenever you've needed it.
