I'm not even sure what this means...I'm pretty clueless...but also very open to ideas

it's ok to be clueless. asking is how you learn.
bi-fold means it's like a book, folds in the middle tri-fold means it's like a pamphlet, folds in two places with three columns z-fold means it's like an accordian fan means that it looks like a fan... some girls who have summer weddings do this.
i would suggest that you start by googling each of them. google and 'image' search, so you can see pictures.
once you see something you like, fm me and i can tell you where to go from there.

I am doing a fan program. Having an outdoor ceremony and cocktail hour in july! I am hoping!!!
