I made Weight Watcher friendly Pumpkin Muffins & Bread over the weekend.
I bought the boc of pilsbury pumpkin bread mix & cans of diet ginger ale.
Pour the mix into a bowl & add 1 can of diet ginger ale (or diet sprite). Mix. (add raisens if you like)
Pour mix into muffin pans or bread pan and bake according to direction on the box (although I felt mine needed an extra 10 minutes)
I also have a recipe for pumpkin pudding that I will have to dig out.

I made the angel cake with the diet ginger ale last week and topped it with fat free cool whip & fresh strawberries. Best 3 points I ever spent

Re: Pumpkin recipes?
i made really good pumpkin muffins once! a can of pumpkin mixed with yellow cake mix (dry...don't add anything to it)...and then bake in the oven. yummy. and i make really good pumpkin pie on the holidays. it's pretty much a basic recipe. i think ww has one too that you make with pudding or cool whip. i can't exactly remember.

Re: Pumpkin recipes?
i just made brownie muffins. a box of devil food cake and a can of Libby's pumpkin. Mix well (it's actually like cement). Put in muffin tray. bake for 12 mins at i beleive 350
they were just ok. however they did taste like brownies (ww conscious recipe here lol)
the yellow cake mix sounds much better mixed w/the pumpkin!

When I was in Nursing school we ate those Dunkin pumpkin muffins everyday... it was deadly.
