OK, they're not really Christmas cookies... but my aunt always used to make assorted cookies for the holidays and my favorite in the assortment were oatmeal butterscotch chip cookies. Mmmmmmmm..... but I don't have a specific recipe... I just use whatever chewy oatmeal recipe I can find online that day and throw butterscotch chips in there (A LOT of them). Voila!

You are awesome for posting this topic! I have a Christmas party tomorrow and wanted to make something quick and easy!

I've been thinking about these:

Chocolate Chip Pecan Blondies

Makes 16 blondies

Hands-On Time: 10m
Total Time: 4hr 00m

Ingredients
Nonstick vegetable oil spray
1 1/2 cups all-purpose flour, spooned and leveled
1 teaspoon baking powder
1/4 teaspoon kosher salt
1/2 cup (1 stick) unsalted butter, melted
3/4 cup granulated sugar
1/2 cup brown sugar
2 large eggs
1 teaspoon pure vanilla extract
3/4 cup chopped pecans or walnuts
3/4 cup semisweet chocolate chips

Directions

Heat oven to 350° F. Spray an 8-inch square baking pan with the nonstick spray. Line the pan with a piece of parchment, leaving an overhang on two sides; spray the parchment with the nonstick spray.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a large bowl, whisk together the butter and sugars, then whisk in the eggs and vanilla. Stir in the flour mixture, then the pecans and chocolate chips.

Spread the batter in the prepared pan and bake until a toothpick inserted in the center comes out clean, 35 to 40 minutes.

Cool completely in the pan. Holding both sides of the paper overhang, lift the cake out of the pan, transfer to a cutting board, and cut into 16 squares.

Note: Total Time includes cooling time

yummmmmm what a fun QOTD - i LOVEEEEE to bake....each year, my mom and I make about 8 different kinds of Christmas cookies. Now that I don't live on LI we can't bake together I don't have my recipes here at work, but I'd say my fav one are the peanut butter balls that we make...they have rice krispies in them for an extra lil crunch and dipped in chocolate ... mmmm so good and easy!

Re: ~~**QOTD 12/11/09**~~

My grandma always baked hundreds and hundreds of italian christmas cookies, and she passed the recipes to me, so most of my baking is those...they are a little more involved than I can tolerate in regular cookies though haha.

My favorite of my own recipes has become this brownie recipe...we don't bake any chocolate cookies for Christmas, so I make these brownies and cut them into little bite size squares to balance out the cookie trays...everyone loves them, and they are my easiest recipe. Also, they are not so fudgy like brownie mix (which I prob love more!!), but they are VERY cocoay and soft.

Brownies

1/2 cup butter
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder

Melt the butter, and then beat in sugar, eggs, and vanilla once it's slightly cooled (don't want to cook the eggs!). Beat in cocoa, flour, salt, and baking powder.
Pour batter into a greased 8' square pan, and bake in a 350 degree preheated oven for 25 - 30 minutes.
