I am having a fall wedding. Originially I was going to use chocolate and champagne, for the dresses, and then have 'fallish' colors for the tables and bo-ks. Recently I'm rethinking...can I use lilac colors for the bo-ks- and tables, or is it to out of season? I'm doing a tent reception on a farm.

Go with the fall colors, especially if your reception is on a farm. Not sure if you will be able to get lilac colored flowers during the fall season, off the top of my head can't think of any other than liatris and some varieties of snapdragons. Lavender roses may be the closest.
Your tent will be white, so using the typical fall colors for CPs will 'pop'. I used burgundies, rusts, oranges, deep reds, with accents of white, green and purple in my cp's. Keep the linens simple then, a creamy ivory or champagne color, votive candles to enhance the colors of the CPs.
