Question about donation scrolls?

Do we have to mention the amount of the donation we are making.. and can it be made in someone's honor?
FH's uncle (also his namesake & godfather) recently passed awayfrom cancer.. so we wanted to make the donation to the American Cancer Society.. How do these donation things work?
