How important is it to have someone with you at all your fitting? I scheduled my last fitting for a Friday at 2 and my Mom can't make it but she can make the first two fittings because they are on Saturdays. Do they teach you how to bustle the dress during the 3rd fitting?
Yes, I would think the last is most important for that reason...but, I bet you can ask them to teach you guys during the 2nd fitting.

In the weddings Ive been in almost EVERY time the Bridal Attendant did the bustle for the girls... Im sure theyve seen it all, so unless its something crazy they can figure it out!
I went to my first fitting alone but my MOH came with me to the second fitting primarily so she could know what to do with the bustle.
you should bring someone to the final so they can teach them how to do the bustle...
