Question for girls who live alone

Question for girls who live alone

As in not with FH and not with your parents...

How do you feed yourself?

I'm so unmotivated to cook for just me, but that means I'm eating out a lot and not only is it unhealthy, it's expensive.

What kinds of things do you cook yourself for dinner that are healthy and easy? Like, stuff tha tyou don't have to go buy the ingredients for every day and maybe things that are good left over for lunch or dinner later in the week? I need some more economical ways to shop and healthier meals to eat.

Thanks!

Re: Question for girls who live alone

Ah- I (especially in the winter) use the crock pot on Sunday and make a big soup. I freeze half if it is broth based, and keep the other half in the fridge for the week. I also tend to have large lunches (big salad or sandwich) and then I have something smaller for dinner (apple with peanut butter, maybe a bowl of cereal).

Sometimes I make a big tray of veggie lasagna, or meat lasagna but use turkey meat. You can def bring that to work to heat up.

My friend told me yesterday that she makes burritos on Sunday and individually wraps them, and brings one for lunch each day. I know it's hard to know what to bring sometimes!

Re: Question for girls who live alone

I actually made turkey meatballs a few days ago. I used two pounds of turkey meat and made like 30 meatballs...if not more.

Here's what I used:
2 pounds of turkey ground meat
Salt
Pepper
Tons of onions (lovveee onions)
Italian Style Breadcrumbs (I threw panko breadcrumbs in there too, but it wasn't necessary)
Parmesan or Roman Cheese
2 eggs
Squirt ketchup in there (you can eyeball it- just to moisten it up a bit more)...

Pre-heated oven to 350. It took about 30 minutes for it all to cook.

Actually today I threw 4 turkey meatballs in a salad I made. It was good. Let me post a pic of the turkey meatballs...

Thos are good suggestions girls, but let's say you didn't cook on Sunday or you don't feel like eating whatever you cooked on Sunday AGAIN... what do you come home and make for yourself?

I know this isn't from scratch...but, I sometimes just eat those frozen steamers. The calories aren't high at all and they have several different kinds.

i live wiht FH but he works nights a lot (tonight being one of them lol)
I normally do salads or frozen veggies or somnething like that

tonight i did those bertolli frozen skillet meals(comes in a bag). i had garlic shrimp and pasta... YUMMO! its 2 servings... i normally eat both servings lol but since I am watching weight now, i actually only had one... they are super easy to make!

jsut throw it in the skillet, cover and then stir every so often.. . done in 9 minutes!

Honestly, I'm the 'old child leech' who still comes home for dinner or over to FH's to make him cook for me.

bc otherwise I'm constantly spending tons of $ trying to eat healthy but getting take out... like getting sushi 3x a week gets pricey.

Re: Question for girls who live alone

When I used to live a lone and was on health kicks I would grill a bunch of chicken and veggies on sunday night and then eat grilled chicken salads and grilled veggies all week. I also boiled a dozen eggs and had two egg whites for breakfast every morning. Very easy to do and it's cost efficient and healthy!!!

The hard boiled eggs is a great idea.

Re: Question for girls who live alone

I don't live a lone anymore.. But did for a while.

I was a big fan of onions and zucchini and grilled chicken!!!. And I would save the extra chicken.

Salads and chicken

(I love chicken)

also soups _ I would make French onion soup and freeze in individual containers!!

Also- as silly as Bj's (the store not the act) had great things even if u live a lone. They have awesome turkey meatballs I loved and could throw on. They also have great deals on the dinner meals like lean cuisines and smart ones. (not a big fan- a lot of sodium but good someties)

my real treat was creamcorn and potatoe chips... its an irish poor person meal!! try itttt

Re: Question for girls who live alone

Ugh, Jamie, I know what you mean. I am in the same boat. Pretty much, if I am not cooking for FH, I am doing takeout or something microwaveable, or at the very most, I will grill a chicken cutlet for myself or something like that. And you're right...it gets expensive!

I try to keep more ready-to-eat type things around, like fruit and veggies. I'll freeze cutlets and other things as individual items in baggies or plastic wrap so it defrosts quick and I don't have to make a whole package of something. Also, they are more expensive but I will buy those single microwaveable ready-to-serve cups of minute brown rice. A common dinner for me is a chicken cutlet, cut up veggie like cucumber and some brown rice, or variations on that meal.

But I don't do this enough. Half the time, I feel like its not worth the effort and the rest of the time, I'm so exhausted, its easier to pop a lean cuisine in or worse, order take out.
