Question for the cooks...

Question for the cooks...

What material is best for a deep wok? Non stick or stainlees steel? Normally I prefer non-stick when I'm going to saute something. But woks are used for Asian inspired recipes which tend to call for liquids or sauces. I'm not sure if these recipes will even need a non stick wok. Is stainless steel really healthier?

TIA

One of my BM's is a cook at Four Food Studio in Melville. She came to my house to cook the other day and was using my pots and pans. I asked her what she normally uses at work, since I have stainless, and she said all they have at work is stainless.

just keep in mind you have to use a good amount of oil to keep the food from sticking

stainless steel DEFINITELY!!! since it's a wok, you're moving the stuff around anyway, so you don't need the non-stick so much. stainless steel is much better.

I have a non-stick one actually and love it. I used it to make my wontons on Sunday

Go Stainless... it lasts longer and the teflon on the non-stick eventually wears off and can be mixed in with your food. If you do opt for Non-stick, do not use Pam type sprays on them. It will eat away at the coating.

I have a non-stick wok and its awesome!! It was wicked expensive but it works wonders. Another awesome asian cooking compliment is the bamboo steamer. That thing is sooo awesome I have steamed veggies, fish, dumplings....all kinds of stuff and its super healthy too.
