Questions for Officiant

I am Catholic (non-practicing) and my FH is Jewish (non-practicing) and we are meeting with a Catholic officiant tonight. (We have a meeting with a Cantor on Sunday.) We were having a bit of hard time finding two officiants to marry us because we are having our wedding on a Saturday afternoon (Sabbath) but finally found two who work together and who would agree to do it.

What kind of questions should we ask? I haven't a clue....
